Black pepper, red wine, and strawberries

The conjunction of strawberry season with this series of blogs about French cooking takes us back to our first introduction to lightened French cuisine, which was not in France at all but in the second largest French-speaking city in the world, Montreal. Les Halles opened in 1971 as a grand Escoffier-like townhouse palace of dining in a city best known to that point for its great baked beans with salt pork. When Dominique Crevoisier took over as chef in the early 1980s, he skillfully blended the haute with the nouvelle to create magical meals that didn’t give the patrons gout. He gave us the best idea of what to do with leftover red wine: Turn it into a peppered syrup to serve on strawberries! He added his own touch by tossing the berries with grated lime zest, which is a surprising complement to the black pepper. Alas, Les Halles closed five years ago, but the dining revolution launched by Les Halles has made Montreal one of the great restaurant cities of North America. And every strawberry season Crevoisier’s red wine-black pepper syrup lives on.

RED WINE-BLACK PEPPER SYRUP

Ingredients

2 cups intense red wine (cabernet sauvignon, syrah, etc.)
2 Tablespoons black peppercorns
1/4 cup sugar

Directions

1. Combine ingredients in large skillet and bring to a boil. Reduce heat to simmer and cook, stirring frequently, until reduced to 1/3 cup of syrup.

2. Strain to remove peppercorns.

3. Cool and serve with sliced strawberries tossed with lime zest and a small scoop of vanilla ice cream.

Reprising Julia Child’s first French meal

The marvelously bourgeois restaurant La Couronne changed the way Americans eat, so when I was in Fécamp to write about Bénédictine for the Robb Report (see “Leisure: A Secret for the Centuries”), I had to stop off in Rouen on my way back to Paris. Mark your calendar: On Wednesday, November 3, 1948, Julia and Paul Child stopped for lunch after their ferry landed at Le Havre and they began the drive to Paris. Writing years later, Julia called it “the most exciting meal of my life.” It was her first taste of French food.



Founded as an inn in 1345, La Couronne (31 Place du Vieux Marché, 33-02-35-71-40-90, www.lacouronne.com.fr) has a strong claim as the oldest auberge in France, not that the countryside Art Nouveau décor suggests such antiquity. Nor does the kitchen: The cooking is timeless northern French cuisine. Since this was a pilgrimage to the spot where Julia Child figuratively discovered fire, I ordered the same dishes that she and Paul ate in 1948.

When I requested six oysters, sole meuniere, green salad, fromage blanc with berries, and coffee, accompanied by a half bottle of Pouilly Fume, my waiter nodded and smiled. “Le Menu Julia Child”

Minutes later he whisked over six perfect Brittany oysters so large and plump that each made two substantial bites. They were presented on a bed of ice with a plate of rye bread and a small pitcher of onion-steeped vinegar. As I paused between oysters to savor the clean salinity, the proprietor, Madame Darwin Cauvin, came over and we chatted about the pilgrims who had been coming since the release of “Julie and Julia,” which featured the First Lunch filmed at La Couronne.




The centerpiece of the meal the Dover sole, a European fish rarely seen fresh on my side of the Atlantic. The whole fish arrived on a presentation platter, perfectly browned with the butter sauce still sputtering. I approved and the waiter whisked it to a side table to de-bone, presenting me with four perfect fillets. Julia called the sole “a morsel of perfection,” and I won’t argue. I closed my eyes to savor the aromas, then opened them to take a tentative bite, chewing slowly and enjoying the mild salty fish and lemony sauce. It was a little like eating hot buttered ocean.

After the sole, the green salad with a lightly acidic vinaigrette was almost anti-climactic, though it did clear my palate for the subtle but unctuous fromage blanc (like a cross between tangy yogurt and sour cream) with fall berries. Black coffee and crisp little tuiles made a perfect finish.

SOLE MEUNIERE

Here’s my version of that great fish dish, substituting New England winter flounder for the unavailable Dover sole. I also use fillets because they are easier to handle and serve than the whole fish, especially without a waiter to expertly de-bone it. The picture, though, was taken at La Couronne, a reminder of how to serve a seemingly unattractive dish. This recipe serves 2.

Ingredients

4 flounder fillets, 4-6 ounces each
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup all-purpose flour
4 tablespoons butter, divided
2 tablespoons olive oil
2 tablespoons minced parsley, divided
4 teaspoons lemon juice
1/2 teaspoon capers

Directions

1. Rinse the fillets and pat them dry. Sprinkle with salt and pepper. Spread flour on a flat surface and drag each fillet through flour, patting lightly. Turn fillets over and repeat. Shake off excess flour.

2. Divide butter evenly between a large (12-15-inch) frying pan or fish sauté pan and a small (8-inch) skillet. Add oil to large pan and heat over medium-high heat, swirling to blend oil and butter. When mixture begins to foam, add fillets and cook without disturbing for about 90 seconds per side, until coating is lightly browned and fish is firm to the touch. Remove to warm platter, sprinkling half the minced parsley on top.

3. Heat butter in smaller skillet over medium-high heat. Swirl pan steadily until butter begins to sputter and brown. When it reaches the color of an almond, add lemon juice, capers, and remaining parsley. Stir vigorously with a slotted spatula to emulsify ingredients and serve immediately over the warm fish.

More asparagus recipes from Friuli

Perhaps I have such an affinity for Friuli because I lived for more than a decade in the Pioneer Valley of western Massachusetts, where Hadley asparagus, grown on the rich riverbank soils of the Connecticut River, is some of the finest “grass” in the U.S. I’m in Cambridge now, but I still gorge on Hadley asparagus during the short May season.

For the last couple of years I have worked to adapt recipes from an authoritative Friuli book on the subject called simply Asparagi 103 ricette by gourmand Antonio Boemo. It just might be the final word in great asparagus cookery, featuring recipes from some of Friuli’s finest chefs. (Thanks, Bepi Pucciarelli, for finding the out-of-print book and helping with the translations.) Here are a couple of my favorite Friuli-style treatments of Hadley asparagus.

SEA SCALLOP AND ASPARAGUS TAGLIATELLE
This can also be made with small in-shore scallops, but the plate looks less dramatic. This dish was adapted from Vanni Aizza of Ristorante La Columbara in the amazingly ancient village of Aquilea (via Zilli 34, +39 0432-910-513). It serves 6 as a pasta course.

Ingredients

6 large sea scallops (about 1/2 lb)
1 lb fresh asparagus
1/4 cup olive oil
3 cloves of garlic, finely chopped
1/4 cup white wine
1/2 cup coarsely chopped parsley
1 cup light cream
salt
1 lb fresh tagliatelle or linguine
pepper

Directions

1. Bring large pot of salted water to boil.

2. Clean the scallops and asparagus, removing tough ends from asparagus and peeling spears if they are large. Cut asparagus into 1-inch lengths.

3. Add olive oil to a deep skillet set over medium heat. Add garlic and brown lightly. Add scallops and sear on one side (30 seconds). Turn over and sear on other side (30 seconds). Add wine to pan. Remove scallops and set aside.

4. Add chopped asparagus and parsley to pan and saute, turning often, for about 7 minutes or until cooked al dente. Add cream to pan and stir well to mix. Bring to full boil for 1 minute. Add scallops and boil two more minutes. Taste and add salt, if necessary.

5. While scallops are cooking, add pasta to pot of boiling salted water and cook 90 seconds to 2 minutes. Drain.

6. Toss pasta with asparagus-scallop sauce, dust with a few grinds of black pepper, and serve.

RUSSIAN SALAD WITH ASPARAGUS AND MUSHROOMS

This is a Friuli version of a classical banquet dish that celebrates the spring mushrooms and asparagus of the Friulian woods and fields. We have some pretty terrific spring mushrooms in New England, too, but this version employs a mix of grocery store fungi. It’s adapted from the recipe by Ivan Uanetto of Trattoria Da Nando in Mortegliano (Viale Divisione Julia 14, +39 0432-760-187). It serves 6.

Ingredients

1 lb. asparagus, peeled and tough ends removed
1 large waxy potato (Yukon, Red Bliss, etc)
2 tablespoons butter
small onion, minced
1/4 cup flour
12 oz whole milk
salt and pepper, to taste
1/2 lb. white button mushrooms
1/4 lb. oyster, chanterelle or shiitake mushrooms, sliced
2 large Roma-style tomatoes, peeled
5 hard boiled eggs
chopped parsley

Directions

1. Steam the asparagus until barely cooked (4-5 minutes depending on size). Cool immediately.

2. Cut potato into 1/2 inch cubes and steam until just barely cooked through (7-8 minutes). Cool and set aside.

3. Melt butter over medium heat in 10-inch frying pan. Add minced onion and saute slowly until onion is thoroughly cooked through but not browned. Place flour in mixing bowl and whisk in milk slowly, blending thoroughly. Slowly add milk mixture to onion in frying pan, stirring constantly. Cook until thick (5-7 minutes). Season to taste with salt and pepper. Remove from heat and let mixture cool.

4. Remove tips from asparagus and set aside. Cut remaining asparagus into 1/2 inch lengths and combine with cooked potatoes. Cut mushrooms, tomatoes, and boiled eggs into similar sized pieces and gently combine with asparagus and potatoes. Mix in dressing and toss gently.

5. Place in serving bowl and lay reserved asparagus points on top. Sprinkle thoroughly with chopped parsley and serve.

Down home flavors from New Orleans

Whenever we’re in New Orleans, our favorite spot to splurge on a night out is Restaurant August, the linchpin of chef John Besh’s six eateries. Not only is Besh a supremely talented chef and restaurateur who understands both great food and the whole concept of a great night out, he’s also one of the nicest guys in the business.

His fried oysters with pepper spoonbread or his lacquered pork belly with crawfish, olives and blood orange are the very definition of refined Southern cooking. (He also serves a mean whole roast sucking pig with grits, roasted onions and blackberry jam. Mm-m-m-m.) It’s no surprise that he’s won a slew of professional accolades, including recognition as Best Chef Southeast from the James Beard Foundation.

So when the nominations for the 2010 James Beard Awards were announced last week, we were delighted to see John Besh’s name again—this time in the American Cooking category of the cookbook awards. Last October Besh revealed his casual side in a delightful guide to the tastes of his home town in the appropriately titled My New Orleans: The Cookbook (Andrews McMeel Publishing, LLC). It’s one of three books nominated in its category, and all three represent a strain of Southern cooking—maybe the country’s hottest regional fare right now. As Bob Wills and His Texas Playboys sang back in 1942, “That’s What I Like About the South.”

Besh has a magic touch, even with soulful simple fare. Here’s his version of a classic, complete with his commentary from the book. Thanks to his publisher for letting us share it here.

RED BEANS AND RICE


Serves 6

Time is the key to making successful red beans: they need to cook slowly and well. Using flavorful fat is another secret. Just as my grandmother did, I keep the fat from every batch of bacon I make, and I save the fat that solidifies on the surface of chilled chicken soup and roast chicken drippings, too. Just a little bit adds big flavor.


2 onions, diced
1 green bell pepper, seeded and diced
1 stalk celery, diced
2 tablespoons rendered bacon fat
1 pound dried red kidney beans
2 smoked ham hocks
3 bay leaves
½ teaspoon cayenne pepper
3 green onions, chopped
Salt
Freshly ground black pepper
Tabasco
3 cups cooked Basic Louisiana White Rice (see below)

Sweat the onions, bell peppers, and celery in the rendered bacon fat in a heavy soup pot over medium-high heat.

Once the onions become translucent, add the kidney beans, ham hocks, bay leaves, and cayenne, then add water to cover by 2 inches.

Increase the heat and bring the water to a boil. Cover the pot, reduce the heat to low, and allow the beans to slowly simmer for 2 hours. Periodically stir the beans to make sure that they don’t scorch on the bottom of the pot, adding water if necessary, always keeping the beans covered by an inch or more of water.

Continue cooking the beans until they are creamy and beginning to fall apart when they’re stirred.

Remove the ham hock meat from the bones, roughly chop it, and add it back to the pot of beans.

Stir in the green onions and season with salt, black pepper and Tabasco. Serve with white rice.

BASIC LOUISIANA WHITE RICE

Makes about 4 cups
This recipe will work with most long-grain rices, including Popcorn Rice. Save some of the fat skimmed from your chicken stock to perfume the rice with many wonderful flavors.

1 tablespoon chicken fat, extra-virgin olive oil, or butter
1 small onion, minced
1 1/2 cups Louisiana long-grain white rice
3 cups Basic Chicken Stock
1 bay leaf
1–2 pinches salt

Put the fat, oil, or butter and the onions into a medium saucepan and sweat the onions over moderate heat until they are translucent, about 5 minutes. Pour the rice into the pan and stir for 2 minutes. Then add the chicken stock and bring to a boil. Add the bay leaf and salt.

Cover the pan with a lid, reduce the heat to low, and cook for 18 minutes. Remove the pan from the heat, fluff the rice with a fork, and serve.

Las Fallas and more paella tips

When we think of Valencia, the first thing we think of is paella. But the city is probably most famous for its jaw-dropping Las Fallas festival always held March 15-19. This year we finally got to attend. It is a whirlwind of parades, music, fireworks, controlled explosions outside city hall, and general madcap revelry that continues around the clock. Valencians construct immensely complex satirical scenes in 300 or more squares of the city. Some of them go 75 feet tall and can cost up to $1 million each. They represent a wide array of political and pop cultural subjects, and the satire can be both biting and bawdy. (Witness Nicolas Sarkozy of France in a hot tub with three buxom women, one of whom is perhaps performing an intimate underwater kiss.)

Between midnight and 1 a.m. on March 20, all but two “pardoned” figurines are burned to the ground. It feels like a cross between Mardi Gras and the bombing of Baghdad as shown on CNN. For the Valencians, it’s a way to get rid of the old and welcome in the new. To the uninitiated, it is simultaneously unnerving and exhilarating. (See the bottom of this post for some sample photos.) But back to paella….

We took a break from the sensory overload of Las Fallas one afternoon to head down to L’Albufera, the lagoon south of the city, for a lesson in making paella outdoors. La Matandeta restaurant sits right at the edge of the lagoon’s rice fields, and chef Rafael Galvez uses rice from the adjacent plot as well as meat and vegetables raised or foraged in the immediate area. Cuisine doesn’t get more local than that.


Working with two 20-inch pans on tripods over wood fires, he made both a traditional paella valenciana (similar to ours—see here) and another version featuring squid and its ink with an abundance of vegetables.


We were reminded that the traditional outdoor cooking infuses the paella with a haunting smokiness and helps to guarantee a nice crust along the bottom. We also learned some tips that we expect to use in our own paella endeavors from now on.


For the paella valenciana, Galvez begins by setting the pan over the fire and adding enough olive oil to thinly coat the bottom—and a few tablespoons of coarse sea salt, which we have never done. At this point he fully browns the meat (bone-in pieces of chicken, duck, and rabbit) along with the onion. As the meat browns, he adds paprika and colorante (a coloring agent with some saffron), and stirs well to coat everything. He then adds three kinds of beans—flat green beans cut in 1-inch lengths, meaty white beans found only in the Valencia area, and a flat bean similar to a lima bean.


The handles on most paella pans are attached with rivets. We had never realized that these marks serve as measuring devices. Galvez adds enough broth to bring the mixture up to the bottom of the rivets. Then he adds the rice to bring the mixture to the top of the rivets. He likes to lay out the rice in a cross pattern on top of the soup, then swirl it into the liquid. He says this distributes the rice evenly. Then he adds a large sprig of rosemary—something we had never seen before but is apparently quite traditional. (He fishes it out before the paella is done to keep the herb from making the dish too bitter.)


After all that intensive prep, Galvez simply brings the mixture to a simmer, adjusting the wood beneath the pan to heat it evenly. We were surprised to see that he keeps the burning wood and its coals around the rim of the pan, but not in the middle. This prevents the dish from burning, as the shape of the pan allows the liquid to bubble up on the sides and spread back toward the middle. He never stirs the rice for the 20 minutes it takes to cook.


The finished paella is a lovely golden dish, which the restaurant serves with a fruity red wine from the nearby Utiel-Requena district, where the Iberians were making wine from the Bobal grape variety 500 years before the Romans invaded. The rice and the wine are a perfect match.

As soon as the weather permits, we’ll fire up the Weber kettle grill to make paella outdoors. Now if we can just find a red from Utiel-Requena….

Making patatas a la Riojana at home

We don’t feel too bad messing around a little with tradition to make this dish with New England provender. This rich stew hails from the Ebro River valley in La Rioja, but until Napoleon brought potatoes to northern Spain in the early 19th century, this dish was made with chestnuts!

Of course, nowadays the local potato varieties of the Ebro valley are highly prized—considered by many the tastiest potatoes in Spain. In fact, the Riojanos tend to keep them for themselves. Not only do they have the rich potato flavor of say, a Kennebec, they also keep their shape like a waxy potato while containing enough starch to thicken a broth. We discovered that a mix of waxy potatoes (Red Bliss are the easiest to find) with some starchy potatoes like russets both thickens the stew and provides some toothy pieces of potato.

The Riojanos also have a special way of cutting their potatoes to maximize the exposure of starch to the broth. Hold the scrubbed, unpeeled potato and insert a sharp small knife at a 45 degree angle to the surface. Dig in about an inch, then twist the potato to make a conical cut. Snap out the piece, and continue until the whole potato is cut into irregular, roughly conical pieces. (It’s actually a quick way to cut up potatoes with a small knife.)

Spanish chorizo is usually available in U.S. grocery stores that cater to a Latin American clientele. Other types of chorizo are less spicy; if substituting, double the garlic and add an additional teaspoon of paprika.

This version of the dish is adapted from chef Raúl Pérez Marín of Restaurante Sopitas in Arnedo, southeast of Logroño, the capital of La Rioja.

Patatas a la Riojana

Ingredients

1 ancho chile pepper, stemmed and seeded and torn into pieces
1/2 cup boiling water
1 1/4 lb. (two large) russet potatoes
1 1/2 lb. Red Bliss or other waxy potatoes
2-3 tablespoons olive oil
1 medium onion, peeled, cut into quarters and thinly sliced
1 large red bell pepper, seeded and roasted to remove skin, cut into 1-inch pieces
3-4 large cloves of garlic, sliced thinly
1 large fresh tomato, cored and skinned, coarsely chopped
1 bay leaf
1/2 teaspoon dried thyme
1 tablespoon smoked Spanish paprika
8 oz. Spanish chorizo, cut in 1/2-inch slices
1 cup dry wine (white or red)
3 cups chicken or beef stock
coarse sea salt and black pepper to taste
chopped parsley to garnish

Directions

1. Soak dried chile pieces in boiling water for a half hour. Puree in blender or food processor. Set aside.

2. Cut up potatoes. Peel russets and cut into 1/2-inch cubes. (They will almost disappear and provide the thickening.) Scrub the waxy potatoes and cut into irregular, more or less conical shapes about 1 inch on widest dimension. Set potatoes aside.

3. Heat olive oil over medium heat in 4-5 quart Dutch oven or other large pot. Add onion and bell pepper and sauté until onion is soft. Add garlic, tomatoes, and bay leaf and sauté until most liquid has evaporated. Stir in thyme and paprika and cook another 30 seconds.

4. Add chorizo and raise heat to lightly brown the meat. Add the pureed pepper.

5. Stir in potatoes and add wine. Bring to boil and cook 3 minutes to burn off alcohol. Stir in broth and raise to a boil. Reduce heat and simmer, covered, for about 30 minutes.

6. Remove about a cup of potatoes from the stew and mash with a little liquid. Stir back in and cook another 5 minutes.

7. Serve in shallow bowls with a little chopped parsley sprinkled on top.

Summer’s bequest: blueberry bread pudding

Please forgive the shameless plug, but the second edition of our locavore book, Food Lovers’ Guide to Massachusetts, has just been published by Globe Pequot Press. We love researching the farmstands, restaurants, bakeries, fishmongers, chocolatiers, and cheesemakers that are featured in the book. Food people are some of the nicest and most generous folk in the world, and they remind us that we don’t have to go to exotic locales for wonderful tastes. We are already at work on the next edition.

Of all the great places in the book, Tower Hill Botanic Garden (11 French Drive, Boylston, MA 01505, 508-869-6111, www.towerhillbg.org), home base of the Worcester County Horticultural Society, is one of the best places to learn about New England heirloom apples. The society maintains one of the most comprehensive collections of New England heirloom apple trees in its orchard and even sells scions for grafting in the spring.

Ironically, the delicious recipe that Cecile Collier, chef at the botanic garden’s Twigs Cafe, shared with us for Food Lovers is for blueberry bread pudding. Craving a little taste of summer, we made one this week with our last cup of frozen berries.

With apologies to Massachusetts, we confess to being Maine wild blueberry chauvinists. David grew up in coastal Maine, and spent many backbreaking summer days raking wild blueberries for the local cannery. We’re both convinced that the flavor of one tiny wild blueberry is greater than the flavor of a half dozen larger cultivated berries. So during the brief season from late July into mid-August, we drive up to Maine and buy them from enterprising pickers who sell along the side of Route 1. What we can’t eat immediately, we save by spreading them in a single layer on a baking sheet and freezing. Within an hour they’re ready for heavy-duty freezer bags. When we pulled them out six months later for this recipe, they were as tasty as they were in August.

Blueberry Bread Pudding

Ingredients

4 eggs
2 cups half-and-half
1/4 cup milk
3/4 cup plus 2 tablespoons granulated sugar
1 tablespoon vanilla
7 to 8 slices of stale bread, crusts removed
1 cup blueberries
Nutmeg to taste

Directions

1. Preheat oven to 350°F. Combine and blend eggs, half-and-half, milk, 3/4 cup sugar, and vanilla.

2. Tear up bread and mix with blueberries. Place in a 9-by-5-inch bread pan. Pour egg mixture over bread and berries in pan. Sprinkle with nutmeg and 2 tablespoons sugar.

3. Place loaf pan into a larger baking pan that has been filled halfway with hot water. Bake for 60-75 minutes, until pudding is set and top is browned.

4. Serve pudding warm, pairing each dish with a small sidecar of vanilla ice cream.

Serves 4.

Steaming mussels in Belgian witbier

As Belgians will attest, beer is every bit as good as white wine for steaming mussels. Chef Eric Cauwbarghs of the Brasserie Kouterhof, which is attached to the ‘t Wit Gebrouw brewery in Hoegaarden, Belgium (about a half hour east of Brussels on a commuter train), showed me this straightforward but aromatic way to make a hearty winter dish of mussels and vegetables. The brewery’s Hoegaarden witbier (white beer) is made with Curaçao orange peel and coriander, and the aromatics make a big difference in the flavor of the mussels. When I can’t find Hoegaarden witbier at home (it’s distributed selectively by Anheuser-Busch), I substitute another wheat beer and augment it with a little fresh orange zest.

Serves 2

Ingredients

2 pounds mussels
2 teaspoons olive oil
1 small onion, chopped fine
3 cloves garlic, thinly sliced
1 stalk of celery, cut diagonally in 1/2 inch slices
2 small crowns broccoli, sliced 1/4 inch thick on the long diagonal
1 large red pepper, seeded and cut in 1/2 inch strips
3/4 cup Hoegaarden witbier
1/4 teaspoon anchovy paste
1/4 cup heavy cream
3 scallions, thinly sliced
1/4 cup chopped parsley

Directions

1. Scrub mussels in cold water, removing any adhering beards or barnacles and discarding any broken mussels or any that don’t close when touched by cold water. Reserve cleaned mussels.

2. Place olive oil in large sauté pan with tall sides. Warm over medium heat. Add onion and sauté until soft, about 2 minutes.

3. Add garlic, celery, broccoli, and red peppers. Turn heat to high. Stirring continuously, sauté until broccoli begins to soften, about 2 minutes.

4. Add mussels to sauté pan. Add beer and anchovy paste and stir constantly over high heat until mussels open (2-3 minutes). Pour in cream and stir until warmed through.

5. Add sliced scallions and chopped parsley to pan. Stir well over high heat for another 30 seconds.

Cold turkey warms to the Hot Brown

The chefs at the Brown Hotel, which has been one of Louisville’s social centers since it opened in 1923, probably didn’t have Thanksgiving leftovers in mind when they created the Hot Brown Sandwich. But it’s one of our favorite ways to use up excess turkey.

Chef Fred Schmidt dreamed up the open-faced turkey and bacon sandwich in 1926 as a treat for up to 1,000 hungry dancers at the hotel’s swanky soirees. Schmidt’s solution to the light-night rush on the kitchen used ingredients readily at hand: toast, roast turkey, Mornay sauce, and bacon strips.

With the unbeatable combination of bacon and cheese sauce, it’s no surprise that the popularity of the Hot Brown has spread well beyond the hotel where it was born. Lots of Louisville restaurants offer a version, but we went to the source for the original. The hotel serves the Hot Brown in a small skillet-shaped ceramic casserole. And they also hand out the recipe, probably taking pity on those of us in misguided corners of America where turkey is considered a diet food. We substitute au gratin dishes for the nifty casseroles, but otherwise don’t mess with success.

Hot Brown Sandwich

Ingredients

1/2 cup butter (one stick)
6 tablespoons flour
3 1/4 cups milk
6 tablespoons grated Parmesan cheese (about 1 ounce)
1 egg, lightly beaten
1 ounce whipped cream (optional)
Salt and pepper to taste
8 slices toast, cut in half diagonally
1 pound roast turkey slices, divided into 4 even parts
2 tablespoons grated Parmesan (for topping)
8 strips of fried bacon
Chopped parsley to garnish
1 large fresh tomato, divided into 8 wedges

Directions

Set oven to broil.

MORNAY SAUCE

1. In heavy-bottomed saucepan, melt butter over medium heat. Stir in flour and continue stirring until it absorbs butter and stops foaming. Do not allow to brown.

2. Stir in milk, keeping flour mixture in suspension. Add 6 tablespoons Parmesan cheese. Continue stirring while bringing almost to a boil. Quickly stir in egg, reducing heat to low. Stir until sauce thickens. Fold in optional whipped cream. Season to taste with salt and pepper.

ASSEMBLY

1. In four 9-inch gratin pans or other shallow, flameproof dishes, arrange toast points, four to a dish. Top with turkey slices. Cover each dish with one-quarter of Mornay sauce and sprinkle tops with remaining Parmesan. Broil until top is bubbling and speckled with brown.

2. On removing from broiler, cross two bacon strips on each dish. Sprinkle top with chopped parsley and stick two tomato wedges into edge of each plate. Serve immediately.

The drugstore lunch counter is a dying breed all over the country, but it’s alive and well in Albuquerque, N.M., where Duran Central Pharmacy (1815 Central NW, Albuquerque, N.M., 505-247-4141) has been around for 45 years and in the same location since 1975. It’s close to the tourist-haunted Old Town, yet locals make up most of the clientele. The food isn’t fancy, but it’s definitely special, highly local, and because it’s full of chile peppers, it’s good for you. Not only does the red chile sauce here have no beans, it also eschews such adulterants as cumin. The green chile is likewise a straight-ahead stew of chopped green chile peppers with just a little sautéed onion and garlic.

Those sauces alone would keep me coming back, but I’m even more impressed with the freshly rolled and griddled flour tortillas. On Thursdays, the drugstore even serves carne adovada—the chile-laced New Mexican dish that’s a spicy cross between pork barbecue and roast pork. Arrive early to get a seat.
